Big Sexy’s Garlic Cheddar Potatoes

Here is the basic recipe when we cook at the restaurant.  You can adjust for your home needs. Enjoy.

  • 5# red potatoes
  • 1/3 c up of chives
  • 1# of butter
  • ¼ cup of salt
  • 1 tbls of pepper
  •  ¼ cup granulated garlic
  • 2 handfuls of shredded cheese


Boil potatoes, drain and add all ingredients except cheese. Mix well. Then add cheese and final mix

Homemade Cinnamon Rolls (with the assistance of the bread machine)

Pull out the old bread machine and let it do the work, that is why we have electricity.

Dough
* 2/3 cup milk
* 1 Large egg
* 2 tablespoons butter (melted)
* 2 cups bread flour
* 2 tablespoons packed brown sugar
* 1/2 teaspoon salt
* 2 teaspoons yeast

Filling
* 1/3 cup sugar
* 1 tablespoon cinnamon
* 2 tablespoons melted butter

Glaze
* 1 cup powdered sugar
* 1/2 teaspoon vanilla
* 1 tablespoon milk to start, more as needed

1. Load dough ingredients in bread machine and use the dough cycle.  When complete, punch the dough and rest for 10 minutes.

2. Mix filling ingredients and set aside. Grease a 9x9 pan.

3. Roll dough into a 9 inch square, spread melted butter and sprinkle filling. Roll dough and cut rolls 1 inch thick (I use fishing line to cut with, works better than a knife). Place in pan and allow rolls to rise for 1 hour or doubled.

4. Bake in preheated oven at 375 until golden brown.
5. Mix glaze add more milk if needed (it should pour easily). Drizzle over the rolls while still warm.

Country Fried Cabbage

Redefine the world of cabbage. This is a must try recipe and let me know your thoughts.
Country Fried Cabbage
·         1 Large Head of Cabbage
·         1 onion
·         1 carrot
·         Spoon of chicken base
·         2 tbls garlic
·         1 tbls salt and pepper
·         Sausage
·         1 cup water


Sweat onion and carrot in bacon grease.  Add cabbage and chicken base, garlic, salt and pepper.  Chop and add sausage and water. Cook on high and stirring for 10 minutes, simmer for 5 minutes no longer. Ready to serve.

Award Winning Avocado Egg Rolls

2nd Place showing at the Oklahoma Steak Cookoff in Tulsa, OK 2013

· 1 large Avocado
· 2 TB. sun-dried tomatoes packed in oil
· 1 tsp. chopped fresh cilantro
· 1 TB minced red onion
· 1/8 tsp. salt
· 3 egg roll wraps
· 1 egg

DIPPING SAUCE:
· 1/4 tsp. white vinegar
· 1 tsp. balsamic vinegar
· 1/2 cup honey
· 1 pinch powdered saffron
· 1/2 cup chopped cashews
· 2/3 cup fresh cilantro
· 2 cloves garlic
· 1 TB sugar
· 1 tsp. pepper
· 1 tsp. ground cumin
· 1/4 cup olive oil

DIRECTIONS

Dipping sauce: stir together vinegar, honey and saffron. Heat for one minute in the microwave. In a blender puree this mixture together adding cashews, 2/3 cup cilantro, garlic, sugar, pepper and cumin. Pour into a bowl and add the oil. Stir and refrigerate. The dipping sauce is ready.

Egg rolls: Stir together the avocado, tomatoes, 1 tsp. cilantro and salt. Add 1/3 of the dipping sauce mixture onto the center of each egg roll wrapper.

Position the wrapper so the corner is pointing towards you. Fold the bottom corner up over the filling. Fold remaining corners up over the filling and brushing the corners with egg to secure in place. Roll up from the bottom folding the top corner over all. Seal with egg and repeat for remaining wrappers.

Fry egg rolls for 3-5 minutes or until golden brown.

Serve with the sweet dipping sauce.

BBQville Traveling Reporter Ron "Seasoned Tail" Swenson visits Q BBQ in Chicago, Illinois

While out and about traveling, I have asked Seasoned Tail to document his visits to BBQ restaurants.  Here is his latest stop.

Maribeth Knueve from Marten a transport and me ate dinned at the Q BBQ Restaurant in Downtown Chicago Tuesday evening. It was my second time there and the food and service was as good as the first 
We ordered the House Bacon Cheddar Hush Puppies. Done to perfection. For dinner Maribeth ordered Pulled Chicken and coleslaw. The checked was moist with the appropriate touch of smoke. She also ordered Brûlée Mac n Cheese. Top was wonderful, the bottom good but average.
I ordered the q3, three meats, ribs, sliced brisket, and pulled pork. The ribs were as good as it gets. Can only imagine how good her 'competition' ribs on the menu would be. The pulled pork was excellent with a slight taste of vinegar. The sliced brisket was moist and tender. For a Texan it could have had a stronger smoke flavor.
The meals were sized to be comfortably full.  

Lee Ann Whippen has transformed a Chicago eating establishment into an upscale Chicago  BBQ restaurant that has the very distinct feeling of warm Southern atmosphere with down home cooking and a staff that cares and obviously enjoy working for her.  This will not be my last trip to the Q.

Crockpot Cube Steak and Gravy

My Rotarian Friend Mary Jennings Recipe. A must try for people on the go.


Cube steak (I used a family size pack)
2 cans (10.75 ounce size) cream of mushroom soup
1 envelope onion soup mix
3/4 cup water
Salt and Pepper to taste

Directions:

Place all ingredients in a crock pot. Cook on low all day. Serve over rice, noodles, mashed potatoes or with your favorite side dishes
